Saturday afternoon COOKIES!!!

I am all about the easy, fast recipes. Last night I made some cookies with my girls. They love to help cook, but half the time my nerves just can't handle their "help". So, I pulled out my recipe book and looked to my easy section. This is my mom's version of the recipe and it takes all of 5 minutes to make these cookies.

2 cups of sugar
3 tablespoons of coacoa
1 stick of butter
1/2 a cup of milk
1/2 a cup of peanut butter
1 tablespoon of vanilla
3 cups of oatmeal

Layout some wax paper on the counter, or aluminum foil and then butter the foil.

Mix the first 4 ingredients (sugar, coco, butter and milk) over a medium-high heat. Bring to a boil. Boil for 3 minutes. (boil less and your cookies won't set, boil more and they'll be too hard and brittle).

Take off heat after the 3 minutes boil and add in the P.B., Vanilla, and Oatmeal. I give the girls each a spoon to mix in the oatmeal and then let them each have a spoonful of hot, gooey, chocolate oatmeal.

Spoonful out the mixture and put on the foil or wax paper in yummy globs. I usually end up eating one before it totally sets because I find them best when they are hot and still gooey.

I absolutely LOVE how easy these sound! I'm more of a fan of the gooey cookie than the hard one anyway. And I like that I don't have to bake them!
